The casserole (clafoutis) is almost as popular in France and as fragrant as the world-famous, French soufflé. Our sponge cake casserole with grapes is a direct import from France.
Peel and seed washed grapes. If you have almost seedless grapes with tender skin you can save this work. Beat egg yolks with sugar and salt until creamy. Fold in the flour. Then add the milk. Whip the egg whites with the juice of one lemon until stiff. Fold into the dough. Grease the gratin dish. Add grapes. Pour the dough. Put into the heated oven.

Gas stove: level 3
Dust with powdered sugar while still hot and serve.
