For the lentil soup with coconut milk, first finely chop the onion and ginger.
Heat some coconut oil in a deep pot and sauté the onion and ginger. Using a coarse grater, grate the potatoes directly into the pot and sauté as well.
Wash the lentils in a sieve, drain them and add them to the pot as well. Add Kotányi VEGGY Exotic and pour vegetable stock.
After a few minutes of cooking, add the coconut milk and simmer for another 15-20 minutes over medium heat, stirring regularly.
Once the lentils are cooked, the soup can be pureed with a blender, depending on your preference.
Finally, season the lentil soup with coconut milk with the juice of half a lime, garnish with cilantro and serve hot.
