For those who love strawberries:
Soak herring fillets, blanch (scald) tomatoes, peel.
Boil half a water with the sugar, cool. Mix with gin and juice of one lemon.
Pierce tomatoes, place in a suitable bowl and pour gin liquid over them. Cover and refrigerate for one night.
Wrap each tomato with a herring fillet, pin with roulade skewers.
Place in a suitable bowl, pour the gin liquid over them and leave to cool for 12 hours.
Mix the whipped cream with the juice of one lemon and a little bit of pepper.
Put a blob of cream on each tomato, sprinkle with crushed juniper berries.
