A great pasta dish for any occasion:
Spaghetti in a large saucepan and plenty of water (4 to 5 l) and 20 grams of salt with the potato cubes al dente ( with bite ) cook. (Potato cubes only after 3 to 4 min in the water – shorter cooking time!).
Drain everything – do not quench, but return it to the pot, which now contains the hot concentrated clear soup.
Finely chop the culinary herbs – the varieties on offer (coarse basil, rosemary, parsley, thyme, sage) – a total of 4 heaped tablespoons of culinary herbs are needed – more if you like. Now add the toasted pine nuts with the herbs and ground pepper to the pasta form.
The pasta should only slightly soak up the clear soup – so only briefly and stir through with the pine nuts, herbs, pepper and 1 tablespoon of butter.
This hot pasta on a baking dish form, finely shaved Parmesan over it – another dash of olive oil and bring to the table.
Do not add olive oil to the cooking water, but stir frequently with a wooden spoon.
Never quench the pasta, but continue to serve it dripping wet.
