Instructions:

Pour the lukewarm milk over the chopped dumpling bread, soften. Cut cheese (you can also use any other cheese) into small cubes, add to bread form with onion fried in butter, flour, chives, eggs, parsley and salt. Mix well.

Form into dumplings with a tablespoon of the mixture in the flat of your wet hand, lightly boil in salted water for 15 minutes. Sprinkle with Parmesan cheese and baste with brown butter.

Originally the Kasnocken are made with Graukas (a typical South Tyrolean cheese). It is worth tasting this cheese when you are in South Tyrol, as it is very tasty and has few calories.

Our tip: always use fresh chives if possible!
