For the vegetable soup, wash, peel and cut the soup vegetables into small cubes.
Cut the onion also into small cubes and fry in a pot with a little oil until translucent.
Deglaze with soy sauce and then pour in the soup.
Add the soup vegetables and simmer for 10-15 minutes until the vegetables are soft.
Finely chop the parsley and add to the soup at the end of the cooking time.
