Once cooled, rinse and dry the turkey and rub all over with salt and pepper. Heat olive oil in a roasting pan and brown the turkey on all sides. Peel garlic, chop finely and add. Pluck kitchen herbs from the stems, chop coarsely and add to the meat. Add milk and maybe Vino Santo.

Steam the roast with the lid closed in the heated oven at 175 °C (convection oven 150 °C , gas mark 3) for a total of one hour 30 minutes. Halfway through the cooking time, turn the roast once to the other side. Remove roast and let rest wrapped in aluminum foil for 10 to 15 minutes. Then cut into slices and bring to the table with the sauce.
