To make the almond pastry, prepare a shortcrust pastry using flour, margarine, yolks, hazelnuts, powdered sugar and vanilla sugar.

Let the dough rest for 1/2 hour. Roll out dough and cut out rombs or squares and bake at 180 degrees until golden.

Fill 2 cookies at a time and dip one side in milk chocolate icing and decorate the almond bakery with a sugar pearl if desired.
