A great cake recipe for any occasion:
One recipe makes 6 to 8 servings.
Preheat the kitchen stove to 200 degrees /gas mark 6. Place the flour with the salt and fennel seeds in a large enough bowl. Mix with a little lukewarm water (use the soaking water from the raisins) to make a smooth dough. Add the raisins, pine nuts and finally the cinnamon and incorporate thoroughly.
Butter a baking dish well, pour in the dough and drizzle with olive oil. Bake for about 20 minutes in a fairly hot oven until a golden brown crust forms. The natural sweetness of chestnuts makes the addition of sugar unnecessary. However, you can sprinkle the finished cake with powdered sugar to your liking.
