For the apple cloud, cook applesauce from the apples, puree it finely and let it cool. Beat the egg whites until stiff and slowly stir in the sugar with the mixer.
The mixture must be whipped until stiff! Fold the applesauce into the mixture and bake in a preheated oven at 180 degrees for 15 minutes in a loin pan lined with baking paper.
Serve the apple cloud immediately, otherwise it will collapse.
