For the zucchini pancakes, wash, peel and grate zucchini. Grate the mountain cheese. Wash chives, shake dry and chop.
Whisk flour, eggs, cream cheese and mineral water to a dough. Season with salt and pepper. Stir in zucchini and mountain cheese.
Melt butter in a pan and fry small pancakes on both sides with 2-3 tablespoons of batter each and serve the zucchini pancakes sprinkled with chives.
