Instructions:

Peel and finely chop onion and garlic and sauté in olive oil.

Peel potato, beet and turnip and cut into small pieces.

Add to the pot and pour 1 1/2 liters of soup.

Let simmer for half an hour. Add mascarpone and puree everything.

Before serving, sprinkle the sunflower seeds over the soup.
