For the Burgenland bean soup, grandmother’s style, lightly sweat onion and garlic in clarified butter. Add caraway seeds and pepper, briefly roast flour with paprika powder and then pour in vegetable soup.

Then add salt and simmer for about 20 minutes. Shortly before the end of the cooking time, add the washed beans and bring to the boil again. Finally, season the Burgenland bean soup with 1 dash of vinegar and some cayenne pepper.
