Cut the peppers into eighths, remove the seeds and chop coarsely. Peel and quarter the onions and separate the skins. Cut zucchini into 1 cm thick slices. Cut cheese into 2-3 cm thick cubes. Clean mushrooms. Put the vegetables on skewers.

Pluck thyme leaves from the stems. Peel and finely dice garlic. Crush the red pepper and add to the olive oil form. Season with paprika and salt. 3.

4. drain the skewers slightly, grill on the broiler for 6-8 minutes, turning frequently. Serve with aioli.

Tip: Zucchini are a type of squash and therefore low in calories, rich in vitamins and easy to digest – just the thing for a light meal!
