Briefly scald the tomatoes, remove the skins and cut into quarters. Cut the vegetables into small cubes. Heat the olive oil in a pot, add the sugar and caramelize. Add the vegetables (without tomatoes) and mix with garlic, tomato paste, bay leaf and basil. Then stir in tomatoes and simmer everything covered for about 15 minutes. Mash the canned tomatoes with a fork, add them to the pot with the juice and cover again and simmer for about 1 hour. Finally, season with chili, sea salt and pepper.
