Hard boil eggs for about 10 minutes. Quench and leave to cool.
In the meantime, prepare the decoration. To do this, peel the carrots. Cut the purple carrots into not too thin slices. Also slice the orange carrot and then cut small triangles from them for the carrot nose. Cut off the tops of the olives so that they are cylindrical.
Cut a piece off the flattened side of the cooled eggs. Carefully scoop out the yolk (e.g. with the handle of a teaspoon) and place in a bowl.
Add mayonnaise and mustard to the yolk. Stir well to form a homogeneous mass. Season with salt and pepper. Pour the filling into a piping bag and fill in the hollowed egg whites.
Place 2 eggs on top of each other with the opening facing down. Skewer a purple carrot slice on a toothpick and stick the olive on the shorter end. Use the longer end to secure the two eggs. Insert the peppercorns into the eggs as eyes and buttons. If necessary, carefully pre-drill holes with a toothpick beforehand. Finally, stick the carrot nose into the filled egg snowmen.
