Steam dripping wet spinach for three min until soft. Drain, chop and squeeze firmly. Sauté onion cubes in fat, mix ricotta cheese with parmesan cheese, egg and egg yolk. Finely grind wheat and 30 g pine nuts. Stir into cheese mixture with spinach and onions. Season with salt, pepper and nutmeg. Cut out small dumplings from the dough with two tsps. Cook in boiling salted water for about four minutes. The gnocchi are done when they float on the surface. Place in a greased gratin dish and sprinkle with the remaining pine nuts and cheese. Put into the oven, switch to 200 degrees and bake for about 25 min.
