For the semolina patties, boil down milk, butter, salt, nutmeg and wheat semolina to a thick paste and allow to cool.

Spread the dough, still lukewarm, to the thickness of a thumb on a work surface and chill.

Then cut out round loaves and coat them in flour, egg, and bread crumbs.

Heat enough clarified butter in a large frying pan and fry the semolina patties in it.
