Stir lobster stock and mascarpone in a saucepan and cook over low gas heat until reduced by one-third. Rinse salmon fillet, dry, acidify and season. Roast in hot clarified butter for about 4 min. Stir cold butter into lobster stock in flakes. Slightly cut the salmon and add to the sauce form. Season to taste.
