Salmon Fillet in Wasabi Sauce

Skin the garlic and chop finely. Rinse cilantro, pluck leaves from stems. Put the leaves aside, as they will be used later for decoration, chop the rest. Clean and rinse the spring onions and cut them into fine rings. Cut the salmon into pieces.

Heat the oil in a frying pan and fry the salmon on medium heat for about 5 minutes on all sides. Do not forget to season the fish well with salt and season with pepper.

Mix the crème fraîche with a third of the orange juice until smooth, season with salt and pepper. Add garlic and onions to salmon form and saute for about 1 minute. Extinguish with lime and orange juice, then mix in the crème fraîche and finally add the remaining juice.

Melt the wasabi in the sauce. Add the chopped coriander and season the sauce strongly with salt and freshly ground pepper. Serve the salmon fillet with the wasabi sauce and garnish with lime or orange wedges, if desired.

Tip: If you don’t like cilantro, you can alternatively replace it with parsley.
