For the rustic shuttles, first prepare the bread baking mix according to the instructions. Preheat the oven to 230°C and divide the dough into 2 parts.
Grease a small baking pan with olive oil and bake the two shaped boats (leave a rim on the outside and press the rest lower) in it for about 10 minutes.
Meanwhile, chop the onion and mix the chopped bacon with the onion. Reduce the heat to 210° and top the shuttles with the bacon and onion mixture.
Bake for another 10 minutes. Then reduce the heat to 200 °C and place a slice of Emmentaler on each shuttle. Bake again for approx. 10 minutes.
