Beat the butter with the salt until creamy. Gradually add the yolks, beating continuously. Press the potatoes through a potato ricer and add to the butter mixture. Stir everything well. Sift the flour with the starch flour and mix well. Season everything together with salt, pepper and freshly ground nutmeg. Beat the egg whites with a pinch of salt until stiff and fold into the potato mixture. Melt the butter and add the soy sauce, orange zest and honey. Stir everything well.
Grease a dish well with butter. Spread the potato mixture about 3 mm thick into the mold. Bake briefly in the heated oven under the broiler. Remove from the heat, spread the butter-soy mixture thinly on top and continue baking until golden brown. Spread the next layer of potato mixture on top, pre-bake, brush with marinade and finish baking. Repeat this process until the potato mixture is used up.
Cool the baked Baumkuchen briefly. While still warm, cut out triangles and diamonds and add to the salmon at the table.
Cut the salmon into narrow slices. Place on a plate and marinate with salt, pepper and coriander. Place the orange fillets on top of the salmon slices.
Mix the lime and orange juice with the orange peels and beat with olive oil. Fold in the chopped dill.
Divide the lettuce hearts evenly on plates. Arrange the salmon slices with the orange fillets on them.
