Clean and rinse the spring onions, then cut them into rings. Rinse the tomatoes, cut them in half. Remove the seeds and dice the tomato flesh. Drain the olives in a sieve. Crumble the feta cheese.

Mix tomatoes, olives, spring onions and feta cheese and season with pepper.

Remove the peel from the potatoes and onions. Grate both on a vegetable slicer.

Add the pepper, salt, eggs and thyme and mix everything together well.

Heat some clarified butter and fry 8 large potato pancakes in order until golden brown.

Spread the feta cheese mixture evenly on top and bring the potato pancakes to the table on the spot.
