For the spelt potato crackers, cook the potatoes in steam, peel and press through the potato press while still hot.

Mix all ingredients and knead into a smooth dough. Let the dough rest for about 30 minutes. Shape pastry as desired, place on a baking sheet lined with parchment paper. Let rise again for 30 minutes.

Brush surface of dough pieces with water and sprinkle with sesame or pumpkin seeds.

Bake the Erdäpfel-Dinkel-Weckerl for about 15 minutes at 200°.
