For poor knights with aquafaba, first puree aquafaba, milk, cashews, agave syrup and salt. Set aside for half an hour and then puree again.

In the meantime, spread jam on three slices of toast. Place the remaining slices on top. Place each side in the aquafaba milk for at least half a minute.

Heat butter in a pan and brown the poor knights on both sides. Then place them on a baking rack and bake in the oven with the grill function until crispy. Cut poor knights with aquafaba in half diagonally and serve immediately.
