Instructions:

Peel the potatoes, cut into quarters and place in salted water. Add the peppermint leaves and cook the potatoes until soft.

Set aside a few leaves of peppermint and chop them. Strain the potatoes and toss them in hot butter.

Sprinkle with the chopped mint leaves and serve.
