Have fun preparing this mushroom dish!
Finely dice the ham.
Soak the sweetbreads in cold water for 2 hours, then put them in boiling salted water to which you have added a dash of vinegar and an onion peppered with clove and bay spice. Cook for 20 minutes. Then peel off the skin and finely dice.
Roast the salted and peppered chicken breast fillets in butter, after cooling finely dice them.
Slice the mushrooms, sauté in butter until soft, season with salt, season with pepper and juice of one lemon, roast until the juice has boiled away. Prepare a light roux with butter and flour, extinguish with stock, simmer gently, add whipping cream and egg yolk, season with juice of one lemon, pepper, salt and Worcestershire sauce, do not make more!
Heat the patties in the oven at 140 degrees convection.
In the sauce, heat the diced ingredients. Pour some of it into the patties, offer the rest in a sauce boat. Add lemon slices and Worcestershire sauce.
This is a traditional Christmas Eve dish: it can be prepared in advance.
