Instructions:

Mix the ingredients and cook for half an hour.

Cut the passion fruit in half, remove the pulp and pass through a sieve. Grate and squeeze the orange.

Caramelize sugar, extinguish with passion fruit juice, orange juice and zest, and reduce a tiny bit over low heat. Add the liqueur.

Heat clarified butter and bake four thin pancakes with the dough.

Place them rolled up in a deep plate, pour the hot fruit syrup over them and serve them sprinkled with coconut flakes.

Tip: It is best to use your favorite ham – then your dish tastes twice as good!
