Melanzane with Onions

Rinse the melanzane and cut the stalks into small pieces. Cut the melanzane in half lengthwise.

Heat oil in a frying pan and roast the melanzane in it from the cut side.

Onion stuffing: fry the sliced and chopped onions, tomatoes and garlic in oil. Add salt, pepper and coriander and mix.

Place the fried melanzane in a gratin dish with the cut sides facing up. Open or press in the top sides with a spoon and top with onion filling.

Dissolve paradeis pulp in water and pour over stuffed melanzane. Bake in oven for fifteen minutes (stove preheated to 200 °C).

Serve with Arabic bread and leaf salad.
