For the mashed potatoes with Parmesan and fried slices of black pudding, peel the potatoes and cut into cubes, boil in salted water until soft.
Drain the water and mash the potatoes, add the butter, gradually stir in the milk, whisk, stir in the Parmesan and mix well.
Fry black pudding slices in a skillet until crispy on both sides. Arrange puree and black pudding on plates.
