Remove the peel from the potatoes and the large onion and grate them into a suitable bowl. Drain the resulting liquid. Stir the flour, egg yolks and oil into the raw potatoes to make a very thick paste. Season strongly with salt and freshly ground pepper. Heat a little oil in the frying pan, brown the small onion in it as a flavoring. Press small pancakes from two to three tbsp. potato dough at a time into the fat, roast them on both sides until golden brown. Drain on a wire rack.

*Uebliche Zuspeisen*: Apple puree or cabbage salad or sweet and sour pickled vegetables.

Latkes are often eaten as a dessert. Later, of course, the dough is prepared without onion and pepper. As additional dishes there are apricot jam, sugar or possibly compote with cinnamon.
