Make the lamb leisurely with the salt and water, skim. Boil down in a closed saucepan for 1 hour.

Chop the carrots, onions, turnips, cauliflower, cut the chief lettuce into strips.

After 1 hour, add the carrots, beets, beans, onions and 1 cup of peas to the soup and cook again in a closed pot for about 90 minutes.

Then add the cauliflower, lettuce, the remaining cup of peas, sugar and mint.

Season to taste with salt and freshly ground pepper.

Simmer for another 30 minutes in a covered saucepan.

Just before serving, add the parsley.

The soup should be very thick, but the meat and vegetables should not be too soft.
