For the honey crepes with tangerine-pomegranate compote, first prepare the crepe batter. For this, stir flour, salt and milk until smooth, add the eggs, honey and beat until smooth.

Let it rest for a while and fry thin crepes in butter. In the meantime, heat 1 tablespoon of honey, add star anise, cinnamon, tangerines, and possibly some juice from the tangerines.

Close the lid and put aside. Remove the seeds from the pomegranate and clean the white from the seeds. Add the seeds to the tangerines. Save a few seeds for decorating the finished crepes.

Mix the curd, orange zest and honey until smooth and fill the crepes with it.
