For the herring salad Burgenland style, first boil potatoes, let cool and peel.
Divide herrings, remove backbone and cut into large cubes.
Mix sour cream and oil, season with salt, pepper and sugar.
Dice the cucumbers and potatoes. Add to the sour cream mixture together with the capers and beans and mix well. Finally, fold in the herring pieces and serve the herring salad Burgenland style.
