For the nut shortcrust pastry, first beat the eggs with sugar until creamy. Mix in almonds, all spices and aromatics, add more almonds and powdered sugar as needed and quickly knead into a shortcrust pastry. Meanwhile, for the tart’l dough, beat the eggs with sugar until foamy. Mix in finely ground almonds, candied orange peel, candied lemon peel and spices. Beat the egg whites until stiff and gently fold into the mixture. Spread a very thin border of the short pastry on each of the wafers. Pour the tart’l dough into the resulting little bowls and bake in the preheated oven at 150 °C for about 25 to 30 minutes. When the tartlets have cooled down completely, decorate them with the icing made of powdered sugar, egg white and a little hot water. Place tart’ln in a tin and store with some apple slices, which will keep the moisture until serving.
