For the gratinated spinach leaves, first defrost the spinach leaves.
Preheat the oven to 180 °C.
Peel and finely dice the onion and garlic.
Fry them in hot olive oil. When they are translucent, add the spinach and season with salt, pepper and nutmeg. Sauté for a bit.
Pour the spinach mixture into an oiled baking dish.
Crumble the feta and mix half into the spinach.
Sprinkle the other half on top, as well as the grated Gouda.
Put the casserole dish in the oven for 15 – 20 min. and bake until golden brown.
Serve the gratinated spinach leaves with really good olive oil and lemon wedges.
