Beat the eggs, whisk and mix with the sugar and honey. Mix the flour with the baking soda and add to the egg mixture. Season with the gingerbread spice and additional cinnamon if desired.
Knead all the ingredients vigorously into a dough and let it rest overnight.
Preheat the oven to 170 °C.
Flour a work surface and roll out the gingerbread dough. Cut out pigs and place on a baking tray lined with baking paper.
Bake for about 10 minutes, then let cool.
In the meantime, prepare the glaze. Whisk the egg whites. Stir with powdered sugar and beet juice until smooth, so that there are no lumps in the glaze. If you want a more intense pink color, you can alternatively use organic food coloring.
Coat the cooled gingerbread pigs with the glaze and allow to dry.
