Peel the ginger bulb and grate finely. Mix with sugar and wine. Bring the mixture to a boil in a large saucepan over a high gas flame. Make bubbling for 1 minute, stirring throughout. Pour jelly into prepared twist-off jars and seal on the spot. Keep refrigerated.
