For the G’roasted dumplings Bolognese first prepare the sauce. To do this, peel the onion and chop it very finely, also chop the carrots very finely.

Heat the oil in a pan and fry the onion with the carrots. Now add the minced meat and fry it, crumbling it. When the meat is well browned, add the strained tomatoes and let everything simmer for about 10 minutes.

If the meat leaks a lot of water, simmer until the water has boiled away, or thicken with 1-2 tablespoons of flour. Season the sauce with salt, garlic and sugar to taste.

Put the finished sauce aside for a short time. Cut the dumplings into bite-sized cubes. Heat 2 drops of oil in a small pan and fry the dumplings.

While doing this, the dumplings can quietly get browned dark brown (NOT black) from browning. Spread the finished sauce over the dumplings and serve the G’röste Knödel Bolognese.
