Pasta dishes are always a good idea!
Heat a small heavy frying pan and pour in 2 tablespoons of oil. Roast the garlic until golden brown, remove and set aside. Heat a large saucepan, pour in the remaining oil and heat the curry paste for 3 min over medium heat. Add the pork and bean sauce and cook the meat for 3 min until brown. Add the turmeric, tomatoes, fish sauce and water and simmer over medium heat for about 15 minutes until the meat is cooked. Divide the noodles evenly among serving bowls and ladle a little sauce over the top. Divide the onion, coriander leaves and vegetables evenly among the bowls, pour more sauce and serve. Offer the roasted garlic separately with it, it can be added to the noodle curry at the table as an additional seasoning.
