Quarter the figs, drizzle with a tiny bit of Prosecco, set aside to cool. Toast the pine nuts in a non-stick frying pan until fragrant. Peel off the peach skin.
Blend the peach flesh with the layered cheese (take curd cheese), 100 g each of pine honey and pine nuts and a little cinnamon in a hand mixer and put to cool.
Mix the remaining pine honey with a little bit of prosecco and pine nuts. Just before serving, whip the whipped cream until stiff and fold into the peach cream with the remaining prosecco.
Fill this into a shallow, large bowl. Quarter the figs, spread them evenly on top and drizzle with the pine honey mix. Finally, place the remaining fig quarters around the whipped cream.
