For the egg nest, clean and wash leeks, cut into rings as fine as possible and mix with flour. Heat oil in a pan and deep-fry floured leek rings in it.
Meanwhile, drain the rings on a paper towel, melt the butter in a pan and beat the eggs into it. Season with salt, pepper and nutmeg. Prepare the eggs as fried eggs or scrambled eggs according to personal taste.
Drape the leek rings on a plate as a “nest” and arrange eggs on top. Chop the chives and sprinkle over the egg nest.
