Creamy Apple Celery Cinnamon Soup

Instructions:

Cut the celery and onion into cubes. Sauté both in butter in a pot, pour in white wine and let it boil down a bit.

Add cinnamon, apple juice and cream. Cook until the celery is very soft.

Puree with a hand blender and pass through a sieve.

Before serving, season the soup with salt and pepper and sprinkle with freshly chopped parsley.
