Clean the fish. Water, white wine, a little bit of greens, sea salt, sugar, bay leaf, white peppercorns and tarragon gently simmer for 15 min. without lid. Put the fish in and let it simmer on a mild heat for about 10-15 min.

After 5 min, remove 200 ml of meat juices and pour into a small saucepan. Reduce over high heat. Add the butter and season. Later remove from heat and add mustard and whipped cream. If necessary, add fresh tarragon.

Serve the fish with the mustard sauce.
