Rocket Salad with Porcini Mushrooms

Trim the arugula, wash and spin dry. Finely chop the spring onions. Clean the porcini mushrooms and cut them into slightly thicker slices. Heat some olive oil, sauté the spring onions briefly in it, add the porcini mushrooms and sauté briefly. Season with a little salt and a squeeze of lemon juice. For the marinade, finely chop the garlic. Mix with pepper, salt as well as vinegar and slowly stir in the olive oil. Mix the arugula with the marinade and arrange on plates. Drape the roasted porcini mushrooms on top, sprinkle with chopped parsley and cover with shaved cheese.
