For the chicken soup with coconut milk, peel and dice the onions and carrots. Heat the butter in a large pot and sauté the onions. Add the carrots and the soup chicken and pour in enough water to cover the chicken. Salt, bring to a boil and simmer for about 1 hour. Meanwhile, cook the rice in salted water until half done, drain and drain. Lift the chicken out of the soup. Skin, bone and cut the meat into bite-sized pieces. Strain the soup through a sieve and skim off the fat. Stir in the coconut milk, add the rice and meat to the soup. Season with desire spice and let simmer a little more on low heat. Remove the soup from the heat. Whisk the yolks with the whipped cream and fold into the soup. Serve the chicken soup with coconut milk in portions garnished with the coriander leaves.
