Knead marzipan, sugar, vanilla sugar, yolks and almonds with the dough hook of the food processor or on a work surface by hand until smooth. Roll out to a thickness of approx. 4 mm and cut out small circles 5 cm in diameter. Place one Amarena cherry in the center of each and cover with the dough. Mix yolk and water and dip the balls in it or brush them with it. Roll in the almonds (sometimes pressing lightly). Place on baking parchment or a baking mat. Bake in the preheated oven at about 165 to 175 °C for about 9 to 12 minutes on sight so that the almonds are golden brown.
