For the cheese omelet, chop the chives. Whisk eggs with mineral water, salt, pepper, nutmeg and chives.

Heat butter in a pan, pour the mixture and fry. Grate the Emmental cheese, sprinkle it on the omelet and continue frying covered until the cheese is melted.

Arrange the cheese omelet and serve.
