For the dough: Sift the flour into a large enough bowl, add the butter cut into pieces and knead it in with your fingertips.

Add the sugar and egg and knead into a firm dough. Roll out thinly and place in a lightly buttered mold. Rest in refrigerator for 30 min. Sprinkle with dry beans and bake in the oven at 180 degrees (gas mark 5) for 10 to 15 min (the edges should be slightly golden).

In the meantime, prepare the garnish: Heat farin sugar, butter, flour, milk and whipping cream. Stir with a whisk and bring to a gentle boil. Make 1 to 2 min until the cream thickens. Add rum.

Pour the crem onto the cake base and cool. Garnish with coffee beans.

Serve with whipped cream. If you are short on time, just use ready-made shortcrust pastry.
