For the curd semolina casserole, boil the milk and add semolina, and a pinch of salt. Allow the semolina to cool. Separate the eggs, beat the egg whites until stiff. Cream the butter with a mixer.
Then add the egg yolk and sugar and continue to mix until it becomes a homogeneous mass. Mix the mixture with the cooled semolina and finally fold in the stiff egg whites.
Pour the mixture into a greased baking pan and add fruits of your choice (cherries, apples, peaches,…). Bake at 160 °C (convection oven) for 40 minutes in the preheated oven.
For the mousse, beat the egg whites until stiff and add the sugar. Then put the casserole back in the oven for another 10 minutes.
